8 c. or 1 kg peas - frozen
1 c. cream (10% or 33% is better)
3 c. water
Salt & pepper

Directions:
Directions:
Bring 3 cups water to boil in saucepan with pinch of salt. Add the peas, bring back to boil, cover and cook until soft - about 10 minutes.

Without draining, blend to puree right in the pot (immersion blender or hand blender will work too)

Stir in the cream, reheat and season.

Serve piping hot.

* For an interesting variation try using smoked pepper or salt and add some chopped ham.

Sounds too easy? Don't let the cream discourage you because it's diluted within a whole bag of peas and water. It really is an awesomely tasty, simple soup and sooo "fresh" tasting compared to traditional pea soup.

You could try doing half cream and half chicken broth if you insist. Or just have a tiny cup as an appetizer!
