1 cup sugar 2 cups water 5 T. cornstarch 3 egg yolks beaten 1/4 tsp. salt 5 T. fresh lemon juice 1 T. grated rind 1/4 stick butter
Mix first 3 ingredients together well using wire whisk. Add other ingredients and cook on medium heat until mixture thickens, stirring constantly. Pour into baked pie crust. Use the egg whites to make meringue. Cook approximately 15 minutes on 350º until meringue is slightly browned.
