4 Tilapia fillets
1 large or 2 med. Vidalia onions cut 1/4" thick
2 med. tomatoes sliced 1/4" thick
4 tbs. fresh basil or 2 tbs. dried basil
8 cloves chopped garlic
4 tbs. olive oil
12 black
olives chopped

Directions:
Directions:
Preheat oven to 375 degrees. Slice onions. Saute in oil over medium heat 2-3 minutes. Place fillets over onion slices. Sprinkle garlic, basil and olives over fish. Place tomatoes on top over fish. Salt and pepper to taste. Place pan in center of oven. Bake 12-15 minutes til fish is opaque. Serve with rice pilaf and spinach salad.
