2 lbs of boneless chicken breast
1/2 cup Extra Virgin Olive Oil (EVOO)
The juice of two lemons
2-3 cloves of garlic
Kosher salt to taste (I use about a teaspoon)
Fresh ground pepper to taste

Cut the chicken in bite size pieces and place in a zip-loc bag. Peel and rough chop the garlic. Put the garlic, lemon juice, salt, and pepper in a blender. Turn the blender on med-high and slowly pour the EVOO in the top to emulsify. Pour the marinade over the chicken and place in the ice box for 4 hours to overnight. Put a heavy frying pan on med-high heat and pour the chicken with the marinade in the pan. Fry until done.

If you do not have a blender mince the garlic or use a couple teaspoons of the pre-minced stuff you can get at the store. Just whisk the EVOO in the bowl.
You can also use chicken thighs if you like to save a little cash, but I like the chicken breast better.
I like to serve this with a rice dish. Sometimes I just use white rice or the chicken flavor Ricearoni. One thing I do when I make rice, I use chicken broth in place of water, just adds a little extra flavor.
You can also grill this. Take the chicken out and put in grill baskets. It turns out good
