1 head red lettuce
1 small jicama, peeled and julienne
1 red onion, julienne
4 oz sliced almonds (1 1/3 cups)
3 Tbsp sugar
1 large can mandarin oranges, drained
Dressing:
1/3 cup orange juice
2 Tbsp red wine vinegar
2 Tbsp sugar
1 tsp dry Italian seasoning (good seasons)
½ cup virgin olive oil
1 tsp grated orange peel

Directions:
Directions:
Put sugar in pan: add almonds and stir at medium heat until golden brown.
Pour onto parchment paper and cool. Break apart.

Mix well
Toss lettuce, onion, cooled almonds, oranges and jicama. Just prior to serving toss with dressing. Serves 8.

This is a great salad for special occasions sure to dazzle the partakers.
Tip – Don’t add the dressing until right before serving…otherwise you will have a complete mess.
