4 cups bread crumbs
1/3 cup margarine
1/4 cup chopped onion
1/2 cup chopped celery
1 tsp salt
1/4 tsp pepper
1 tsp poultry seasoning
4 large pork chops double thickness with pocket sliced into center.

Preparation Time: 20-30 minutes*
*Have butcher cut pocket for stuffing.

Melt margarine. Add onion, celery and seasonings. Cook celery and onion until tender and golden brown. Add bread crumbs and toss to coat. Stuff pockets of pork chops. Bake in foil lined pan at 350º for 1 1/2 to 2 hours. Remove foil and let brown a few minutes.

This is a favorite of Dick's family. I have enhanced stuffing with dried fruit and nuts, about 1/2 cup each and subtracted 1 cup of bread crumbs.
