4 T EVOO

2 lbs Ground beef and/or a mixture of any leftover meats you may have on hand, chopped

2 medium onions, coarsely chopped

2 cloves garlic, mashed to a paste using coarse salt and the back of a Chef’s knife

½ bag small carrots
½ bag frozen peas
½ bag frozen cut green beans
2 C corn and and / or any leftover veggies you may have on hand.
1 sm. box Mushrooms, quartered
6 plum tomatoes, chopped

1 tin Campbell’s beef broth
2 T Worcestershire sauce
1 T thyme
Salt and Pepper to taste

1 box instant potatoes
Follow the directions on the package. However, substitute whole milk for the water. Combine the milk and water amounts and only use whole milk. Add 2 sticks of butter.

Pre heat oven to 350 F

Add beef broth.

Add next 6 ingredients, all the vegetables. Stir to combine evenly.

Add Worcester, thyme, salt and pepper.

Simmer on low heat for 1 1/2 hours, stirring occasionally so the mixture does not stick to the bottom of the pan. Use a diffuser if you like. Simmer until meat is cooked through and veggies are tender.
Adjust seasoning.

Place meat and vegetable mixture into large casserole.

Cook instant potatoes according to package directions but substituting whole milk for water and increasing the butter amount.

Spread the mashed potatoes on top of the meat mixture. Spread evenly. Place in pre-heated oven 350F for 35 minutes

Sprinkle with paprika and finely chopped parsley. Add several dollops of butter and serve

Mm-Mm good!
