5-7 Lb pork butt
9 cloves garlic minced fine
1 1/2 tsp ground black pepper
2 Tblsp. good Hungarian paprika (not flavorless stuff)
1 Tblsp. salt (you don’t need a lot)

Directions:
Directions:
Day 1
Grind the meat and mix with pepper, paprika and salt. Refrigerate. Put the minced garlic in a 1 cup measure and fill with water, soak overnight in the refrigerator.

Day 2
Mix meat well once more. Add the garlic along with the water. Refrigerate overnight.

Day 3
Stuff into casings
Put into smoker or cook immediately

Note: Store paprika in refrigerator or freezer to keep its flavor.

Make often until you have tweaked the flavors to suit your pallet.
