2 Cups Self-Rising Corn Meal Mix
3 Teaspoons Self-Rising Flour
1 Tablespoon Finely Chopped Onion
1 Cup Milk or Water
1 Egg, Beaten

Directions:
Directions:
Combine cornmeal, flour and onion. Gradually beat in milk or water and egg. Drop from a spoon into hot fat where fish was fried. Fry until golden brown; drain on absorbent paper.
NOTE: For additional flavor, add 1 more tablespoon finely chopped onion and/or 1 teaspoon onion powder.

Allow prepared batter to sit about 5 minutes before spooning into hot oil. This helps to assure round hush puppies. For perfect frying, keep the temperature of the oil around 375º. This makes it simple to get light hush puppies that are done on the inside before they get too brown on the outside.
