1 cup crushed vanilla wafets 2 egg yolks 1/2 cup sugar less 1 Tbs 1 tsp lemon rind 1 Tbsp lemon juice 3 egg whites 1 cup whipping cream
Beat egg yolks and all but 1 Tbsp of sugar. Cook in double boiler until thick, add lemon rind and juice. Fold in beaten egg whites and 1 Tbsp sugar. Fold in whipped cream. Butter refrigerator pan. Sprinkle lightly with crumbs, then add filling and rest of crumbs to top.
