1 1/2 c. Wild Rice - cooked (or canned)
1/4 c. butter
1 c. carrots - shredded
1/2 c. raisins
1/2 c. almonds - slivered or chopped
6 green onions - chopped
1 apple - cored and chopped
2 tbsp lime or lemon juice
1/2 tsp. ground cardamon
1/2 tsp. salt
1/2 tsp black pepper

Directions:
Directions:
Melt butter in skillet. Add carrots, raisins, nuts, onions, apple and lime/lemon juice.Cook over medium heat 5 min or carrots are softened.

Remove from heat; stir in wild rice. Add *cardamon, salt and pepper.

*Cardamon substitute: equal parts of cinnamon and nutmeg.
