1-3/4 lb. flank steak
1-1/4 tsp. salt
1 large onion, quartered
4 cloves garlic, pressed
1 c. chicken broth
1 large onion, chopped
1 large green pepper, chopped
2 tsp. olive oil
4 cloves garlic, minced
1 can diced tomatoes with the juice
2 T. lime juice
1-1/2 tsp. hot sauce
1/2 tsp. ground cumin
1/2 tsp. pepper

Directions:
Directions:
Put meat, quartered onion, pressed garlic and broth in pressure cooker. Achieve full pressure and steam, then reduce heat to medium and cook for 45 minutes. Let meat cool and drain. Saute chopped onion and green pepper until tender. Add minced garlic and saute for 2 more minutes. Stir in diced tomatoes, lime juice, hot sauce, cumin and pepper. Cook until most of the liquid evaporates (approx 7 minutes). Shred and coarsely chop beef, add to tomato mixture. Serve on rolls.
