3 eggs
1 c cooking oil
2 1/2 c sugar
3 t vanilla
1 t salt
1 t soda
1/4 t baking powder
1 t cinnamon
2 c grated unpeeled raw zucchini
3 c flour
1 c chopped nuts
Lemon icing:
1 t melted butter
1 t milk
1 t lemon juice
1 c powdered sugar

Directions:
Directions:
Combine eggs, oil, sugar, & vanilla and beat thoroughly. Add sifted dry ingredients and blend well. Stir in zucchini and nuts.
Bake in two loaf pans or a 10-cup bundt pan. Bake at 325 60-70 mins. or until done. Cool and drizzle with lemon icing, if desired.
