2 cups of spelt flour
1 cup of oat flour
1 cup of brown rice flour
2 cups sugar
1 cup brown sugar
1 egg
1 1/2 sticks margarine (softened)
2 sticks butter
1 pkg yeast
3 tsp. cinnamon

Directions:
To make sure the yeast is active, mix yeast into one cup of lukwarm water. Sprinkle lightly with sugar. While mixing the following ingredients, proof yeast by watching yeast mixture for bubbling. Next, mix all flours together. Set aside 1 cup for struesal. Mix 3 cups of flour, a pinch of salt, 1 egg, and 1 cup of sugar, and 1 1/2 sticks of margarine. Add the yeast/water mixture into this and stir. Place a towel over bowl and allow to rise in a warm location for 1 1/2 to 2 hours. While this is rising begin mixing streusel.

To mix streusel, mix together 1 softened stick of butter, 1 cup of sugar, 1 cup of brown sugar, and 1 cup of flour and 3 tsp. of cinnamon. Mix until crumbly.

After coffee cake has been rising for 1-2 hours, spread mixture evenly onto a large baking sheet and spread streusel evenly across top. Cover again with a towel and allow to rise for another 1 1/2 hours.

Preheat oven to 400º. Bake for approximately 20 minutes, until streusel appears light brown and crunchy. Remove from oven. While allowing to cool, Melt a stick of butter in a sauce pan, and cook and stir butter until it turns brown. Drizzle across top of coffee cake. Cool and serve.

Speaking of coffee, I hate to tell you this...but watch your flavored creamers in your coffee...you guessed it, possibly wheat!
