1 small onion, 3 T butter, 3/4 pound ground beef, 1/2 cup leftover cooked veggies, 1 can beef gravy or leftover gravy (or one package dry gravy mix made according to directions), 1/2 cup water, 1/4 teas. salt & pepper, 2 eggs, 1 cup milk, 1 cup flour, 1/2 teas. salt, grated cheddar cheese.

Saute onion in 1 T butter - add meat and cook until brown; add vegetables. (I have used leftover roast beef in this also) Combine gravy and water in 2 cup measure. Stir 1/4 to 1/2 cup gravy to meat mixture; add salt & pepper. Melt remaining 2 T butter in pie pan or quiche dish in oven while the oven preheats. Beat eggs, add milk, flour and salt and beat until smooth. Pour into pie pan. Spread meat filling evenly over the batter to 1 inch of the edge. Bake 30 minutes at 425 degrees or until brown and puffy. Serve with remaining gravy and top with grated cheese.
