1 Jimmy Dean Sausage, regular
1 chopped onion
large bag hashbrown potatoes, thawed
8-10 eggs, beaten
3 cups shredded cheddar cheese
24 small flour tortillas or 12 large
Picanta sauce or Salsa

Directions:
Directions:
Brown the sausage and onion. Drain on paper towels. Brown the hashbrowns and remove from skillet. Clean skillet or use new one - scramble eggs until done but not dry. Combine all ingredients together and add cheese. Fill tortillas; wrap in plastic wrap or wax paper. Freeze or eat now! If freezing, place wrapped tortillas in gallon size freezer bags. Will freeze well up to 3 months.

Frozen tacos heat well in microwave - about a minute and 30 seconds. Great for breakfast on the go or breakfast for a crowd.
