5 ¾ cups Bread Flour ¼ tsp. Yeast 2 ½ tsp. Salt 12 oz. Water
Mix. Let stand for 19 hours Punch down – let stand for 15 minutes Form into loaf. Let rise for 2 hours on towel sprinkled with corn meal. Pre-hear oven with Dutch Oven inside. Gently turn load into heated Dutch Oven. Bake at 450°F for 30 minutes covered and 15 minutes uncovered.
