"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for POPPY SEED CHICKEN CASSEROLE, by Teresa Burgess, is from The Cousins' Heritage Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
Cook chicken until done but still tender. Save broth. Cut chicken into bite-size chunks. Butter casserole dish. Mix all casserole ingredients together and pour into dish. Mix Ritz cracker crumbs and melted butter to form a crumbly mixture. Gently spoon the mixture on top of the uncooked casserole. Sprinkle with poppy seeds.
Bake at 350º about 45 minutes, or until rice is soft.
