4 pounds of Yukon Gold or Russet or Irish potatoes, peeled
12 tablespoons unsalted butter
1 1/2 cups heavy cream or a can of evaporated milk
1 teaspoon salt

Directions:
Directions:
Cut potatoes into 3/4-inch slices. Place in Dutch oven and add water to cover 1 inch. Bring to boil over high heat. Reduce to medium and boil until potatoes are tender, 20 to 25 minutes.

Heat butter and heavy cream/evaporated milk until butter is melted; keep warm.

Drain potatoes and return to Dutch oven; stir over low heat until potatoes are thoroughly dried. Place in mixing bowl. Whip potatoes slowly, adding warm cream mixture and salt.
