2 pounds ground beef
1 medium onion, chopped
1 medium bell pepper, chopped
salt and pepper
1/2 cup raw rice
3 1/2 cups tomatoes
sprinkle of sweet basil
2 cups cheddar cheese

Directions:
Directions:
Brown ground beef, chopped onion and bell pepper in large skillet. Add basil, salt and pepper, raw rice and tomatoes. Cover and simmer 15 minutes; stir occasionally. Remove from heat, put in baking dish and cover with cheese.
Place in 350º oven uncovered and bake for 5 to 10 minutes or until cheese melts.

Going to school full time, being the pastor of a church full-time, raising 2 children, and hoping we didn't run out of money before the Sunday pay check, led to eating a lot of Cowboy Hash when we lived in Gober, Texas.
