Chicken Breasts
Eggs
Bread Crumbs
grated Parmesan cheese
Emeril's Essence or other Creole seasoning
Fresh Chopped Parsley
Salt and Pepper
Mozzarella
Best Basic Marinara Sauce, see recipe in sauces

Directions:
Directions:
Combine bread crumbs, parmesan and seasonings, beat eggs. Dip chicken in bread crumbs then in egg, then back into bread crumbs. Fry in olive oil until done. Place in baking pan, top with mozzarella and bake at 350-375 until cheese is melted. Put on plate and top with marinara.
