4 servings of firm white fish about 1/2 inch thick (we like cod loins the best, but is also good with orange roughy)
1/4 c. grated Parmesan cheese
1/4 c. crushed Ritz crackers (can also use bread crumbs, but the crackers are better)
1/2 stick melted butter or margarine
Garlic, oregano and basil

If fish is frozen, thaw and pat dry, pressing as much liquid out as possible. Mix Parmesan, crackers and garlic, oregano and basil (to taste, but about 1/2 t. each).

Put melted butter on a plate and cracker mixture on another plate. One at a time, put fish in butter and then in cracker mixture, pressing so that mixture stays on fish on both sides. Place on baking sheet (I use a Pampered Chef baking stone). Sprinkle any remaining crumbs on top and then drizzle with any remaining butter. Bake at 400º for about 20 min or until fish is flaky.
