1 10 3/4 oz.can vegetable broth
1 10 oz. can Rotel tomatoes w/ green chillies
1 t. salt
1/2 t. crushed red peppers
1/2 t. dried basil
1/2 t. dried oregano
1 10 oz. box quick-cooking couscous
1 can black beans, rinsed and drained
2 T. olive oil
4 green onions, diced
1/2 c. green pepper, diced
1/2 c. celery, diced (1 rib)
1/4 c. chopped fresh parsley
2 cloves garlic, pressed

Serves: 8-10

Bring broth, tomatoes, salt, red pepper, basil and oregano to a boil in large sauce pan. Remove from heat and stir in couscous. Let stand 10 minutes. Fluff and stir in remaining ingredients. Serve hot or cold.
