1 stick butter
6 cups zucchini, peeled and cubed
1 cup shredded carrots (optional)
1 small onion
1 pkg. stove top stuffing
1 cup sour cream
1 can cream of mushroom soup

Directions:
Directions:
Melt butter and mix with stuffing. Layer bottom of 13x9" pan with half stuffing mixture.
Saute zucchini and onion for about 10 minutes. Combine all other ingredients with zucchini and onion. Pour over stuffing. Sprinkle remaining stuffing on top.

Bake at 350º for about 40 - 45 minutes
