3 medium sized sweet potatoes
1/2 cup firmly packed brown sugar
1 tsp. ground cinnamon
1 tsp ground nutmeg
2 large winesap or other cooking apples, peeled and cut into rings
streusel topping...

Streusel Topping
1/4 cup all purpose flour
1/4 cup firmly packed brown sugar
1/4 cup butter or margarine
1/4 cup chopped pecans

Directions:
Directions:
Place unpeeled sweet potatoes in a Dutch oven with water to cover. Cook until tender (about 25 minutes), do not overcook. Drain, cool and slice into 1/4 inch rounds. Combine brown sugar, cinnamon and nutmeg. Layer sweet potatoes, apples and brown sugar mixture in a lightly greased 11x7x1 1/2 baking dish beginning and ending with sweet potatoes. Sprinkle with streusel topping. Bake at 350 for 30 minutes.
