Crust:

28 graham crackers, crushed or 1 1/2 cups crumbs
1/4 cup butter
1/4 cup sugar


Cheesecake:

3 pkgs (8oz) cream cheese, softened
1 cup sugar
4 eggs
1 tsp vanilla



Topping:

1 pint sour cream
1/4 cup sugar
1/2 tsp vanilla

Directions:
Directions:
Crust: Mix crumbs butter and sugar and press into bottom and sides of 9" springform pan, forming crust, reserving 1/4 cup of crumb mixture for topping. Cheesecake: Beat cream cheese and sugar together well. Add vanilla and egg yolks one at a time beating well. Fold in stiffly beaten egg whites. Pour in crust. Bake 30 minutes at 375. Cool 10 minutes. Top with mixture of sour cream, sugar and vanilla. Return to oven, cook at 425 for 5 minutes. Sprinkle top with reserved crumb mixture. Refrigerate 24 hours before serving. May be served sweetened with fruit.
