4 boneless chicken breasts
2 T. flour
1/4 tsp. salt
1/4 tsp. pepper
1 T. canola oil
1/2 c. orange juice
1/4 c. orange marmalade
2 T. honey mustard
1/4 tsp. dried rosemary, crushed
1 11-oz. can mandarin oranges, drained

Flatten chicken to 1/4-inch thickness. In a shallow dish, combine flour, salt, and pepper. Coat chicken. In a large skillet, brown chicken in oil. Combine orange juice, marmalade, mustard, and rosemary. Pour over chicken. Cover and continue cooking for about 10 minutes or until chicken is done. Stir in the oranges.

Serve over rice.
