1 cup sugar 2 eggs 2 cans mandarin oranges (drained) 1 cup real orange juice (not from a can) 1 cup vanilla chocolate chips (opt) 2/3 cup oil 3 cups flour 1 Tbsp baking powder 1 tsp baking soda 3/4 tsp salt
1 cup flaked coconut 1/3 cup sugar 2 Tbsp margarine melted
In a mixing bowl combine sugar, oil, eggs and orange juice. Mix well. Add flour and oranges. Spoon into greased muffin tins. Combine topping and sprinkle on dough. Bake at 350º for 15-20 minutes.
