Crust:

1 cup graham crumbs
1/4 cup ground pecans
1/4 cup melted margarine
2 Tbsp granulated sugar


Filling:
1 can (14oz) pineapple chunks (opt)
1/4 cup lemon juice
1 envelope unflavoured gelatin
2 pkg (250g) cream cheese, softened
1/2 cup sugar
1 cup whipped whipping cream
1 tsp grated lemon rind

Directions:
Directions:
Drain pineapple reserving 1/2 cup juice. Add lemon juice. Soften gelatin in juice. Heat gelatin slightly to dissolve. Cool. Beat cream cheese with sugar. Blend in cooled juice mixture. Mix well. Fold in whipped cream, 1/2 cup pineapple chunks and lemon rind. Pour into prepared crust. Chill at least 4 hours or overnight. Garnish with remaining pineapple and strawberries.
