1/4 cup chopped onion
2 Tbsp butter
2 cups diced raw potatoes
1 cup boiling water
1 tsp salt
3 chicken bouillon cubes
3 cups milk
2 Tbsp flour
1 Tbsp chopped parsley
grated cheese

Directions:
Directions:
Saute onion in butter. Add raw potatoes, water, salt, and bouillon cubes. Cook until potatoes are tender (about 10 minutes). Combine milk and flour. Cook over medium heat. Stir constantly until smooth and thickened and just comes to a boil. Stir in chopped parsley. Ladle into bowls and top each with grated cheese.
