½ cup finely chopped onion
2 Tblsp butter
1½ cups cooked and drained chopped spinach
1 crushed garlic clove
3 cups cooked rice
½ cup grated Parmesan cheese
4 slightly beaten eggs
1/2 cup milk
2 tsp salt
1/2 tsp pepper
1 cup shredded Mozzarella or Monterey Jack Cheese

Directions:
Directions:
Blend all ingredients except eggs, milk, salt and pepper.

In separate bowl, combine eggs, milk, salt and pepper. Add to rice mixture.

Place all in well-buttered or Pam sprayed shallow 2 qt casserole. Top with 1 cup shredded Mozzarella cheese.

Bake at 350 degrees for 30 minutes or until egg mixture in casserole sets.
