1 box oven-ready cannelloni shells

1 can (14oz) tomatoes, mashed
1/2 cup chopped onion
1/4 cup chopped celery
1/2 tsp sugar
1/2 tsp parsley
1/2 tsp salt
1/8 tsp pepper
1/4 tsp oregano
1/4 tsp basil
1/4 tsp garlic powder
diced cooked chicken breast (opt)

1 1/2 cup cottage cheese
1 cup mozzarella cheese
1/4 cup Parmesan cheese
1 large egg
1 Tbsp flour
1/2 tsp oregano
1 Tbsp chives
1/4 tsp salt
1/8 tsp pepper
1/4 tsp garlic powder
3 Tbsp milk

Combine all sauce ingredients. Bring to a boil and simmer about 20 minutes, until liquid reduces. Stir all filling ingredients in a bowl. Stuff pasta with filling using a small fork or spoon. Pour about 1/3 of the sauce into a 9x9" pan (or small casserole dish). Arrange cannelloni over top in a single layer. Cover with remaining sauce. Bake covered at 350 for 40 minutes. A bit time consuming to fill, but worth the effort.
