2 pounds of New (red) potatoes
2 -3 Tablespoons of Olive Oil
1 Tablespoon of Kosher or Coarse Sea Salt
3 stems of fresh Rosemary (about 1 1/2 Tablespoon dried)
1 teaspoon Fresh cracked Black Pepper

Directions:
Directions:
Preheat oven to 425 degrees. Wash and prepare potatoes for roasting, cutting them in quarters to uniform size. Add all other ingredients in a bowl with potatoes, toss to coat with herbs and oil. Roast on a flat baking sheet with a lip on all sides. Use spatula to turn during the cooking time, Bake for 25-35 minutes until golden brown.
