4 skinless, boneless chicken breast halves
1 lemon, zested and juiced
1 T chopped fresh rosemary leaves
1½ c. chicken broth
4 hard boiled eggs, coarsely chopped
1 - 2 stocks of celery, medium dice
¼ c. green onions, white portion only, fine cut
1 c. mayonnaise
2 T. Dijon mustard
2 tsp. sweet pickle relish
TT salt
TT pepper

Directions:
Directions:
Place chicken in a skillet, and sprinkle with lemon juice and 1/2 the rosemary. Pour broth into the skillet. Bring to a boil, reduce heat to low, and simmer 25 minutes, or until chicken juices run clear. Drain, cool, and dice chicken.

I a large bowl, add the chicken and the rest of the ingredients and mix well. Salt and pepper to taste. Refrigerate in a sealed container for at least an hour before serving.

Sometimes I add a little curry in to take to another dimension. However, Tana is not a great fan of curry, so I usually separate the batch and make a little for me.
