1 - 2 1/2 lb. frying chicken (or 4-6 chicken breasts)
1/2 c. flour
1 tsp. salt
1/8 tsp. pepper
1/4 tsp. paprika
1 medium onion, chopped
1/2 c. dry sherry
1/4 c. water
1/4 c. mayonnaise
1/2 c. yogurt
2 tbsp. minced parsley

Clean, skin and quarter chicken. In large bowl, combine flour, salt, pepper and paprika. Dust chicken with flour mixture by "dipping" each piece into the bowl and shaking off excess flour. Add oil to large, heavy skillet. Preheat skillet and add chicken. Brown on both sides. Add onion, sherry, and water. Cover and simmer until tender (about 1 hour or less for chicken breasts). Remove chicken to hot platter and keep warm. Add mayo and yogurt to liquid in skillet blending with whisk until smooth. Add parsley. Pour mixture over chicken.
