4 eggs, separated
1/2 c. sugar
1 t vanilla
1/3 c. sugar
1/3 c. cocoa
1/2 c. flour
1/2 t. baking powder
1/4 t. baking soda
1/8 t. salt
1/3 c. water



Filling:
1 c.heavy cream
1/4 c. powdered sugar
1/4 c. finely crushed peppermint candy (candy canes)


Glaze:
2 T butter
2 T cocoa
2 T water
1 C powdered sugar
1/2 t vanilla

Serves: 8-10
Preparation Time: 40 minutes

Cake: Line jelly roll pan with foil, grease foil. Beat egg whites until foamy - gradually add 1/2 C sugar, beating until stiff peaks form. Set aside. Beat yolks with vanilla on high for 3 minutes, gradually add 1/3 C sugar and beat 2 minutes. Combine dry ingredients and add to yolk mixture alternately with water. Fold into egg whites. Spread in pan. Bake at 375º for 12-15 minutes. Top will spring back when touched when it is baked through. Immediately invert onto towel that is sprinkled with powdered sugar. Carefully peel off the foil. Roll up in towel. Cool, then unroll and spread with filling*, then re-roll and glaze*. Chill. I sprinkle more chopped candy canes on top.
*Filling: Beat heavy cream until slightly thick. Add powdered sugar and peppermint candy and a few drops red food coloring. Beat until stiff.
*Glaze: Melt butter in small pan over low heat. Add cocoa and water. Stir constantly until thickened. Do not boil. Cool slightly and blend in powdered sugar and vanilla.

We have this every Christmas, without fail. I have served this at our bridge Christmas party too. It's great served with peppermint ice cream.
