2 T oil
3 med. carrots, diced
4 med. chicken breasts, cut into 1/2" strips
1 16oz. can stewed tomatoes
1 T chili powder
1 can black beans, drained
4 servings cooked rice

Directions:
Serves: 4
Preparation Time: 30 minutes

In 4 qt. pan over medium heat, heat oil and cook carrots until tender and lightly browned. Stir in chicken and chili powder. Cook, stirring occasionally, until chicken is lightly browned.
Stir in black beans, tomatoes & 1/4 C water. Heat to boiling. Lower heat and cover and simmer until chicken is cooked through. Spoon over rice and serve.
