2/3 c. sugar
6 T. all-purpose flour
2 t. vanilla
1 c. heavy cream
1/2 t. salt
1 1/2 lbs. fresh cherries, pitted, or 1 1/2 lb. frozen cherries
1/2 t. lemon zest

In large bowl, combine egg yolks and 1/3 c. sugar. Beat with mixer on medium until ribbons form, about 8 min. Add flour, vanilla, and cream. Reduce speed to low. Beat until completely blended, scraping sides of bowl occasionally.

In small bowl, beat egg whites and salt about 30 sec. Add whites to batter. Beat on low speed until incorporated, 1 -2 min.

Butter large rectangular baking dish. Preheat in 375 F oven for 4 - 5 min. In bowl, stir together cherries, 1/3 c. sugar and zest. Remove pan from oven. Pour in cherries. Top with batter. Bake until clafoutis is set in middle, 30 - 35 min. Serve warm with ice cream.
