4 eggs
1 package (2-layer size) lemon cake mix
1 package(4 serving size) instant lemon pudding mix
3/4 cup water
1/3 cup vegetable oil
1/4 cup freshly squeezed lemon juice
1 tablespoon lemon zest
2 cups powdered sugar

Directions:
Directions:
Preheat oven to 350º. In mixing bowl, beat eggs until thick and lemon-colored. Add cake mix, dry pudding mix, water, and vegetable oil.
Beat at medium speed of electric mixer for 10 minutes. Pour batter into a greased bunt pan. Bake at 350º for about 50 minutes, or until a wooden pick inserted in center comes out clean. Allow cake to cool 10 minutes, then invert on plate. Combine lemon juice, zest, and powdered sugar. Drizzle over cooled cake.

Some of our family cooks have also prepared this cake in a 9x13 inch cake pan. While it is still from the oven, they poke several holes in the cake with a fork and then cover with the glaze. Either way, this is one yummy cake, and Miss Katy's favorite.
