2 c. sugar
4 Tbsp. cornstarch
1 c. white vinegar
1/2 c. chicken broth
1-2 (15 oz.) pineapple chunks, reserve 1/2 c. pineapple juice
1/2 c. ketchup
2 Tbsp. soy sauce
2 -4 lbs. chicken
1/4-1/2 c. cornstarch
broccoli, cut
bell peppers, cut
pineapple chunks
zucchini, opt.
onions
sesame oil or canola oil
2 egg whites
water

Directions:
Preheat oven to 350º. Beat egg whites in a dish, cut chicken in chunks and coat in an egg, dredge in cornstarch. In a large skillet, brown chicken on both sides. Put in a 9x13 pan. In a medium sauce pan mix sugar and cornstarch. Add vinegar, broth, juice, ketchup, and soy sauce. Mix well and bring to a boil, cook 1 minute or until sauce is clear. Cut your vegetables and put on top of chicken. Pour at least half the sauce on top and cook in the oven for 45 min. or until veggies are tender. Serve over rice with remaining sauce.
