6 tablespoons cornstarch
1 cup sugar, divided
1/2 teaspoon salt
2 cans (20oz.) crushed pineapple
4 eggs, separated
2 tablespoons lemon juice
1 baked 10-inch pie shell

Directions:
Directions:
Combine cornstarch, 1/2 cup sugar, salt, and pineapple (undrained) in saucepan. Cook over low heat, stirring constantly until clear and thickened. Beat egg yolks, add a little of the hot mixture to yolks, return to saucepan with lemon juice. Cook 1 minute. Cool thoroughly. Pour into pie shell. Beat egg whites until stiff but not dry; add remaining 1/2 cup sugar slowly while beating until meringue stands in peaks. Swirl on pie, covering entire surface to the edge of the pastry rim. Bake at 425º for 4 minutes.

My dad, Homer often told the story of how his mother, Dollie Bowen, get up early and prepared this pie before she left for work. When he and his brother Richard came home from school, this pie was waiting on the counter.
