1 lb. asparagus
1 Tbsp.olive oil
1 Tbsp. Dijon mustard
4 slices Havarti or Swiss cheese
Salt & pepper to taste

Directions:
Directions:
Preheat oven to 450. In an ovenproof baking dish, coat the asparagus with the olive oil, Dijon mustard, and salt and pepper. Cook for 5-7 minutes or until the asparagus is bright green. Top with the cheese and return to the oven for 5 minutes or until cheese is melted. Serve immediately.
