3 lb roast
2 cloves garlic, crush with salt
2 - 3 lemons or limes

Au jus:
1 T. thyme, fresh if possible
3 tsp lemon/lime zest
1 - 2 c. beef stock
1 tomato, peeled, seeded and diced (concasse)

Mix the lemon/lime juice with the crushed garlic and salt. In a gallon size zip lock bag marinate the roast and the garlic mixture for at least 2 hours.

Bake the roast, uncovered, on a rack in a low sided pan at an oven temperature of 325ºF until done as you wish. Remove from the oven and the pan the roast to allow the meat to rest and finish cooking for about 30 minutes.

Remove most of the excess fat from the pan and bring the liquid to a boil on the stove top, add the thyme, zest, tomato, beef broth and reduce the liquid to about half. Strain the au jus and pour over the sliced roast beef.
