Noodles & Co Pasta Fresca Recipe

2 t extra virgin olive oil
2 1/2 c. pre-cooked farfalle (bow-tie pasta)
1/4 c. cubed roma tomatoes
1 T diced red onions
2 shakes of kosher salt & cracked pepper
1 oz. baby fresh spinach
1 oz. fresca sauce (recipe below)

In a very hot saute pan, add: olive oil, noodles, tomatoes, red onion and salt & pepper. Sear noodles, stirring occasionally until steaming hot. Add spinach & fresca sauce. Toss to combine, serve w/ freshly shaved Parmesan cheese.

Fresca Sauce: (for 15 servings)
1/4 c. fresh garlic
2 t. kosher salt
1/4 c. balsamic vinegar
1/4 c. sweet white wine
1 c. extra virgin olive oil
