Preheat oven to 350 degrees. Fry eggplant in pan coated with olive oil and breadcrumbs. Once fried transfer to baking pan. Add smashed tomatoes, tomato sauce, basil, garlic and cheese on top. Bake at 350 until hot. Roughly 15 – 20 minutes.
