"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Coat tuna with oil (peanut or sesame). In a separate bowl, mix together 1 cup panko and 1 teaspoons of wasabi powder. Press to cover tuna on all sides. It will stick to the oil.

Heat a frying pan to medium/medium-high with enough oil to lightly cover the surface of the pan. Pan fry the tuna for 1 minute on either side. In a separate pan cook the spinach in oil.

Serve tuna slice thinly on top of cooked spinach. Add salt and pepper to taste.
