3 boneless chicken breast
1/4 cups all-purpose flour
3/4 cups milk
3 tbsp cracker meal
1 tbsp dry white wine
2 eggs well beaten
salt and pepper to taste
2 garlic cloves, finely shopped.
Finely ground cracker meal, salted to taste
Oil for deep frying.

1. Boil chicken until tender, then drain water and allow chicken to cool.
2. Ground chicken and set it aside in a large bowl
3. Place flour in a large saute pan and slowly add milk, stirring constantly over medium heat.
4. Add butter and continue to stir until it reaches paste-like consistency. Remove it from heat and stir in 3 tbsp of cracker meal, salt pepper and garlic.
5. Sprinkle chicken with wine and add it to flour mixture. Mix well and refrigerate.
6. Once mixture is thoroughly chilled, rubbed a small amount of vegetable oil in the palm of your hand and make finger sized croquettes.
7. Dip each croquette first in egg, then in cracker meal; dip it a second time in egg and cracker meal before frying it.
8. Deep fry for several minutes until golden brown, but not over cooked.
