3 1/2 c dry navy beans
1 lb smoked ham hocks or 1/2 lb cubed salt pork
1/2 c chopped onion
1/2 c packed brown sugar
1/2 c maple syrup
1 tsp salt
1 tsp dry mustard

Directions:
Directions:
Completely soften beans (simmer the dry beans in 3 times thei volume of unsalted water for 30 minutes. Allow to stand, covered, for 1 1/2 hrs or until softened, drain and reserve 1 cup of liquid). Put bean in crock pot. Add all remaining ingredients along with the cup of reserved liquid, mix well. cover and cook on low for 10 - 12 hrs. cut ham from bone and return to crock pot. If thicker beans are desired , uncover and cook on high during the last hour. Variation: stir in 2/3 c ketchup and 2 tbl of prepared mustard during the last hour.
