Vegetables:

2 medium sweet potatoes (peeled & sliced into wedges)
2 parsnips (peeled and sliced) *can increase amount
1 red onion (sliced)
1 fennel (sliced) *never used – hard to find in Grand Prairie
(I have also added carrots and celery)

Dressing:

½ cup Catalina dressing
½ cup cranberry juice
¼ cup maple syrup

Directions:
Directions:
Place veggies in a large baking dish.
Toss with dressing.

Bake at 350 degrees or until vegetables are tender.
