1 tsp. Dijon mustard,
1/4 c. balsamic vinegar (red or white),
1/2 c. virgin olive oil (cold pressed),
1/2 tsp. sea salt,
black ground pepper to taste.

Optional ingredients:
1 T. fresh chopped herbs such as basil, thyme, oregano, chives, parsley or 1 tsp. dried herbs.

You may substitute 1/4 c. fresh lemon juice instead of vinegar.

For blue cheese dressing add:
1/3 c. crumbled blue cheese, gorgonzola or Roquefort.
2 T. heavy cream (optional).
Sherry vinegar may be substituted for balsamic vinegar.

In a glass jar with a lid, combine the Dijon mustard and vinegar. Put on lid and shake until the mustard is dissolved. whisk in the olive oil and then add salt and pepper and herbs if desired. Put on the lid and shake again.

To make blue cheese dressing, stir in blue cheese and optional cream at the end with a whisk or fork
